On the road again - yipee skipee!

We finally have something to talk about besides the weather! After being house bound for several months, we loaded up Seasons2Go (the trailer, not the blog) and headed south to Rainbow Plantation in Summerdale, AL. We belong to a group called Escapees and they have 19 rv parks all over the country, as well as a 142 discount parks offering 50% off the regular fees. Besides wanting to visit Rainbow Plantation, the main draw for this location was our good friends, Barb and Terry Ellis from Ontario have been here since February. We have been so fortunate to be able to meet up with them on three occasions during their six months stay in the U.S. And are we having a blast!!! Seems like every time we get together we discover something new that we have in common.
Rainbow Plantation is like a resort on wheels with so many activities and events to participate in that you hardly know where to start. It's Mardi Gras frenzy down here and the schedule is more full than usual. On our first day here Terry and I participated in a wonderful Cajun cooking class. Lots of delicious recipes and tips for authentic Cajun cookin'. I learned a new way to steam fresh shrimp in the shell which I'll be using from now on. Also, an easy and yummy Raspberry Vinegrette dressing has become one of my favorites. The best part was we got to eat all the menu items. After a lunch like that, I was ready for a nap.
However, we had no time for sleeping because we all piled in the car and the guys dropped Barb and I off at Fabrics by the Pound to buy material for the quilting class tomorrow morning. They went on to Camping World where they picked up some items we needed for the trailer. Believe it or not, Barb and I were finished with our shopping before they were.
More about the quiliting class on the next blog entry. It's 1:15 now and we've got another big day ahead.
